ABOUT THE WINES

When Proprietor Georges Daou & Winemaker Daniel Daou founded DAOU Vineyards, they specifically sought out DAOU Mountain because of the rare calcareous clay that perfectly mimics the terroir of Bordeaux.


From there, they planted Cabernet Sauvignon (later expanding into other varieties). The vines are hand pruned, and, once they are to perfect ripeness, they are handpicked at night. All of DAOU wines are made with free-run juice, meaning the grapes are never pressed. After a careful fermentation process with a native yeast from DAOU Mountain, the wines are aged until they are ready to be shared.


Due to the high phenolics of our Estate Wines, they are ready to be enjoyed today, but will continue to develop over years to come.

The Current Tasting Selection

Bottle of Estate Chardonnay

The 2021 DAOU Estate Chardonnay reveals how the Chardonnay grape achieves brilliant expression on DAOU Mountain. Rich aromas of lemon zest, honey, cinnamon toast, and casaba melon are interlaced with floral notes of jasmine and hibiscus blossom. The nose is rounded out beautifully with impressions of spiced pear, toasted almond, vanilla bean, and tangerine. A silky, voluptuous palate is generous with lemony freshness, juicy mango, and sliced nectarine, followed by flavors of crisp green apple and papaya with accents of hazelnut and nutmeg. This triumphant Chardonnay finishes elegantly with great length, leaving lingering essences of pineapple and tropical rainforest.

Bottle of Solomon Hills Pinot Noir

This limited-edition Pinot Noir comes exclusively from the famed Solomon Hills Vineyard, the westernmost vineyard in the Santa Maria Valley, just 11 miles from the Pacific Ocean. In 2020, a blockbuster vintage only elevated this pedigree, producing a wine that delivers deep concentration with balance and elegance. Exquisite flavors of cola, cherry, spice and raspberry showcase the vineyard’s cool-climate terroir. The palate is backed with great structure and savoriness, all leading to a mouth-filling experience through the finish.

Bottle of Reserve Unbound

The 2020 DAOU Unbound is a daring blend of Petite Sirah, Tempranillo an Tannat. This wine's inky dark aubergine color hints at the depth and power to come. Heady aromas of warm blackberry cobbler, blueberry compote, plum jam and safe are accompanied by suggestions of sandalwood, dried herbs, cassis, pencil shavings and leather. Meanwhile, a trace of menthol complements the dark fruit profile. The palate is powerfully structured with firm but elegant fine-grained tannins that support a solid core of pomegranate, cherry, black raspberry, plum, and forest floor earthiness. Secondary layers reveal dried herbs, wet stone, toffee, and black currant. A generous persistent finish presents hints of blackberry and blueberry balanced by black olive and truffle.

The DAOU Reserve Eye of the Falcon showcases Winemaker Daniel Daou’s artistry with Bordeaux-style blends. True to form, the 2020 vintage is an intense yet graceful blend of

Cabernet Sauvignon and Petit Verdot. A rich ruby hue prefaces lively scents of blackberry, cassis, Bing cherry, plum and violet, while suggestions of leather, dried tobacco, sage and sandalwood enhance the wine’s aromatic complexity. A deep, juicy palate delivers generous flavors of black cherry, black plum and ripe blueberry with hints of kirsch, licorice, cedar and roasted almond. A soft, lengthy finish unfolds with plush tannins and lingering notes of cranberry, cocoa and graphite.

Each year, the DAOU Estate Cabernet Sauvignon showcases what is possible from DAOU Mountain in the masterful hands of Winemaker Daniel Daou. The 2020 vintage offers a highly perfumed nose of wild cherry, blackberry and currant with notes of plum, persimmon, graphite and cigar box, all underscored by a crushed limestone minerality. The palate is voluptuous and vibrant, presenting generous flavors of fresh blackberry, blueberry compote, kirsch and cassis along with espresso, dark chocolate, vanilla and hints of lavender potpourri. Firm, well rounded tannins provide unmatched structure and body, while an elegant, persistent finish lingers with suggestions of black raspberry, currant and spiced plum. An age-worthy Cabernet Sauvignon that will reward careful cellaring for many years to come.
