When Proprietor Georges Daou & Winemaker Daniel Daou founded DAOU Vineyards, they specifically sought out DAOU Mountain because of the rare calcareous clay that perfectly mimics the terroir of Bordeaux.
From there, they planted Cabernet Sauvignon (later expanding into other varieties). The vines are hand pruned, and, once they are to perfect ripeness, they are handpicked at night. All of DAOU wines are made with free-run juice, meaning the grapes are never pressed. After a careful fermentation process with a native yeast from DAOU Mountain, the wines are aged until they are ready to be shared.
Due to the high phenolics of our Estate Wines, they are ready to be enjoyed today, but will continue to develop over years to come.
Inspired by the renowned rosé wines of Provence, France, our 2020 DAOU Discovery Collection Rosé remains faithful to its origins. This wine is remarkably fragrant, offering generous aromas of fresh peach, Bartlett pear and nectarine, with subtle notes of hyacinth, apricot and crushed rose petals. The palate is delightfully silky, underlying a clean, fresh crispness delivering enticing flavors of mango, Crenshaw melon, lemon chiffon and tangerine. Secondary layers reveal hints of sweet cherry and vanilla with orange peel accents. A luxurious and lasting finish leaves traces of apple pie, strawberry and kiwi.
The 2021 DAOU Estate Sauvignon Blanc represents the lighter side of Bordeaux varieties grown on DAOU Mountain. This wine exhibits classic varietal aromas of lemongrass, gooseberry, grapefruit and quince, all rounded out with notes of flint, acacia, wet stone and sweet oak. The palate is crisp and clean, showing abundant flavors of key lime, honeysuckle, white peach and kiwi accented by Crenshaw melon, green apple and dragon fruit. A long, generous finish lingers with hints of pineapple, melon and passionfruit.
This limited-edition Pinot Noir comes exclusively from the famed Solomon Hills Vineyard, the westernmost vineyard in the Santa Maria Valley, just 11 miles from the Pacific Ocean. In 2020, a blockbuster vintage only elevated this pedigree, producing a wine that delivers deep concentration with balance and elegance. Exquisite flavors of cola, cherry, spice and raspberry showcase the vineyard’s cool-climate terroir. The palate is backed with great structure and savoriness, all leading to a mouth-filling experience through the finish.
Inspired by the classics of Saint-Émilion, the 2020 DAOU Reserve Seventeen Forty is a Cabernet Franc driven wine with a harmonious complement of Merlot. Beguiling aromas of blackberry cobbler, raspberry, crème de cassis and cherry pipe tobacco anticipate hints of toasty oak, black licorice and pencil shaving. Lush and full bodied, this wine bestows rich flavors of cherry, black plum, dark chocolate and blueberry compote with lovely accents of Zante currant, graphite and cinnamon. Solid structure and fine-grained tannins support a lengthy, focused finish, leaving notes of plum and boysenberry underscored by cocoa and black truffle.
The DAOU Reserve Eye of the Falcon showcases Winemaker Daniel Daou’s artistry with Bordeaux-style blends. True to form, the 2020 vintage is an intense yet graceful blend of
Cabernet Sauvignon and Petit Verdot. A rich ruby hue prefaces lively scents of blackberry, cassis, Bing cherry, plum and violet, while suggestions of leather, dried tobacco, sage and sandalwood enhance the wine’s aromatic complexity. A deep, juicy palate delivers generous flavors of black cherry, black plum and ripe blueberry with hints of kirsch, licorice, cedar and roasted almond. A soft, lengthy finish unfolds with plush tannins and lingering notes of cranberry, cocoa and graphite

An added floral dimension imparts an integrated sense of elegance and freshness. While full-bodied with ultra-high phenolic levels, this wine maintains its evenness and poise through an extraordinarily long finish. Structured, balanced and powerful, the 2019 Soul of a Lion will reveal its full magnitude after several years of careful cellaring.
