Confit Leg and Roasted Breast
with DAOU Reserve Eye of the Falcon
The dark and light meats cook at different times and temperatures. Turkey 2 Ways allows both to be perfectly cooked and succulent.
Confit Turkey Legs:
1 fresh medium sized turkey, legs and breasts removed.
5 pounds salted butter
10 stems tarragon
1 head garlic, cut in half exposing all the cloves.
Leave in the husk.
Juice of 1 lemon
Zest of 1 lemon
4 stems of thyme, sage
2 bay leaves
1/4 cup sea salt
2 tablespoons black pepper
Preheat the oven to 300°F. Season the legs with salt and pepper, set inside deep oven proof braising pan with a lid.
Melt butter with herbs and lemon juice. Pour over the legs, making sure you have decent coverage over the legs. Place in oven. Cook for 2.5 hours until the leg has pulled back exposing the leg knuckle. At this time, the meat should be falling off the leg.
Leave in butter to cool until ready to serve. When ready, remove from butter and just help the confit leg fall apart. Enjoy with Reserve Eye of the Falcon.
Oven Roasted Turkey Breast:
1/2 cup of the herb butter from the cooked turkey legs above
Kosher Salt and black pepper
Preheat oven to 375°F. Rub the turkey breasts with the reserved herb butter, salt, and pepper. Place skin side up in an oven proof pan. Place in oven and cook until 165 internal temperature, or about 20-25 minutes. Let rest 10 mins until cutting. Enjoy with DAOU Reserve Eye of the Falcon.
